Greek Salad Ingredients:

1 large head romaine lettuce, torn into bite-size pieces
1 cucumber, peeled and thinly sliced
8 radishes, thinly sliced
2 scallions, thinly sliced
cup red-wine vinegar
cup extra-virgin oil
salt to taste
4 hard cooked eggs, peeled and halved lengthwise
dill springs, for garnish

8 servings

In a large bowl, combine the cucumber, lettuce, radishes and scallions. In a small bowl, whisk the oil with the vinegar and season with salt. Add the dressing to the salad and toss well. Top the eggs, garnish with dill and serve immediately.
